Veganizing Gingerbread

I hope you're all fine and enjoying the very unique mixture of chaos and bliss that is pre-Christmas :-)

I simply love the season. Christmas markets, gift wrapping, so many spices in the air... and Grandma's famous gingerbread. It's an old family recipe and the dough consists prett much of honey, caramelized sugar, eggs, milk, spices and flour.

Grandma's gingerbread has always been a part of my life, I cannot remember a childhood winter not baking it with her, I cannot remember a Christmas without its taste. And... last week, gingerbread and I celebrated another milestone: I managed to veganize it! It has been easier than expected, no eggs, soy milk, agave syrup...

I'm happy. It's indeed a merry merry Christmas time :)
